An eight-course temaki handroll omakase — Japanese technique, contemporary approach — with wine pairings curated by our cellar.
On select Sundays, our bar becomes something else entirely. Gilded Lily Izakaya — a small chef-driven concept rooted in Japanese tradition — takes over The Authentique for an intimate, coursed omakase built around thoughtfully sourced seafood and seasonal ingredients, one handroll at a time.
We stay in our lane: the wine. Each seating is paired from our list of French growers — Champagne, Chablis, Loire whites and the occasional curveball — chosen to meet the omakase course by course.
